Beat Wampfler, a Swiss veterinary, and the bass player Christian Pauli are testing to see if music affects cheese maturation – the process that develops flavour, texture, and aroma in this food.

The experiment is being done with eight types of Emmenthal cheese. Each will “listen” to a different type of music – including hip hop, rock, classical music, and electropop. One cheese will remain in a silent room.

The goal is to discover which sound vibrations have the most impact on cheese. According to the veterinarian and the bassist, bacteria and yeast (fungus) from maturation process are affected by different sound waves.

If it works out, the plan is to market the cheese with the most flavour, smell, and texture after being in contact with music.
