Food engineers Andressa Jantzen da Silva Lucas and Lauren Menegon de Oliveira are from the Federal University of Rio Grande in the state of Rio Grande do Sul. They announced in early October that they had created bread made with cockroach flour.

The idea came out of a concern with a potential food shortage in the coming decades. This could happen because of the increase in the world’s population. The Brazilians chose cockroaches for two reasons: they are an excellent source of protein, and they have been around for millions of years. Cockroaches have never had to adapt to their environment because of alterations such as climate change.

Cockroaches used in the flour live in captivity and are suitable for consumption. The resulting bread has more protein and less added fat.
