ON MAY 20TH, the Michelin Guide, the leading gastronomic rating publication, once again included Brazilian restaurants in its star ranking after four years. The newly rated establishments in the guide were announced in a special ceremony at the Belmond Copacabana Palace hotel, in Rio de Janeiro (RJ).

In Brazil, 15 restaurants received one star; six were given two stars, and none achieved the highest honor of three stars. In addition to the classic star ratings, the guide includes a separate list of restaurants considered sustainable, that is, with initiatives that show concern for the environment. It also launched the Bib Gourmand list which brings to light names that combine good cuisine and affordable prices.

How did the Michelin Guide come about?

In 1889, in France, brothers Andre and Edouard Michelin, who owned a tire company, created a guide with useful travel information, such as a list of places to eat on the road and to fill up the car with gas.

Afterwards, the guide expanded to include hotels and restaurants in Paris, the French capital. Over time, the free publication started being sold and became one of the main references for restaurants and hotels, fine tuning their specialization criteria. In 1926, the guide began using stars to rate establishments.

How does the guide rate the restaurants?

Five main points are taken into consideration: the quality of ingredients used by the restaurant, mastery of culinary techniques, harmony in flavors, the cuisine’s personality communicated through its dishes, and how consistent the menu is. According to the guide, for the star rating, only the quality of the food served is taken into consideration: other aspects, such as the atmosphere and service, are not taken into account.
